Ingredients

    1 large can black beans 30 oz. drained and rinsed
    1 large green pepper cut into 2" pcs
    1 large onion cut into wedges
    6 cloves of garlic peeled
    2 eggs
    2 tablespoons chili powder
    2 tablespoons ground cumin
    2 teaspoons thai chili sauce or hot sauce
    1 cup bread crumbs

Directions

Preheat oven to 375 degrees and spray baking sheet with baking spray.

In large bowl, mash beans with fork or potato masher until thick and pasty.

In food processor, finely chop green peppers, onion and garlic, then stir into bean mixture.

In a seperate bowl, combine eggs, chili powder, cumin and hot sauce. Mix well, add to beans and mix.

Add bread crumbs to bean mixture and stir until mixure is pasty and sticks together.

Divide mixture into patties and bake about 10 minutes on each side.

    This is really good....too hot to start the oven so I cooked in vegetable oil in an electric skillet....good flavor, nice crispy edges....make mine a double! - 6/1/10

    These are very good! I grilled mine and I do think next time I may add a little more garlic and chili sauce. - 6/8/10
