A delicious and nutritious breakfast! A delicious and nutritious breakfast!
Number of Servings: 1


    Spinach, fresh - 2 cups
    Egg substitute, liquid 1/2 cup
    Garlic, chopped 1/4 tsp. (optional)
    Black pepper, dash


Spray a small omelet pan with olive oil.
Add garlic, spinach and a Tbs of water.
Steam spinach until cooked down.
Add 1/2 cup Egg substitute and dash of pepper.

Optional - chopped onions, fresh cherry tomatoes or sun dried tomatoes.

Stir until done for a scrambled egg texture. If you prefer more of an omelet cover and cook for 1 minute and flip and cover and cook until done.
Makes 1 serving. Double ingredients and use bigger pan for addition servings.
