Ingredients

    1 tsp canola oil
    2 tsp chpped garlic
    6 cups chopped cabbage
    4 cups chopped carrots
    2 cups chopped potatoes
    1 can chick peas
    1/4 cups tomato paste
    1 Tbsp curry powder
    3-4 cups water

Directions

Saute garlic in oil. Add curry powder, tomato paste, and 3 cups water. Bring to a boil then add vegetables. Return to a boil and cook for about 30 minutes. Stir every 5-10 minutes, adding more water if needed. Cook until vegetables are cooked through.

Makes 10 one-cup servings.
