Ingredients

    3/4 C Light Vanilla Soy Milk
    1/4 C Sunsweet Lighter Bake
    1/4 C Brown Sugar
    1/4 C Egg Substitute
    Juice from 1 large Orange
    1 1/2 tsp Orange Zest
    1/2 tsp Vanilla Extract

    3/4 C All-Purpose Flour
    3/4 C Whole Wheat Flour
    1/5 C Wheat Bran
    3 tsp Baking Powder
    1/4 tsp Salt

    1 1/2 Large Bananas (the more ripe, the better)

    1 tsp Granulated Sugar

Directions

Preheat oven to 400 degrees F. Spray muffin pan with cooking spray. (Recipe makes 12 regular sized muffins)

Add the first 7 ingredients (soy milk through vanilla extract). Mix with a wooden spoon until lighter bake and sugar are dissolved.

In a separate bowl, add the flours, wheat bran, baking powder and salt. Mix well.

Add flour mixture to the wet mixture and stir until just moistened. Batter will be lumpy.

Take the bananas and slice length wise in 1/2. Then slice the halves in half again. Chop these into small pieces and add to the batter. Stir no more than 5 times.

Spoon batter into muffin pan. Sprinkle 1 tsp of sugar on top of all muffins. Bake for 15-18 minutes. Begin to check at 15 minutes. If you need to add time because they are not done, add by increments of 30 seconds. They cook quickly. Cool for 10 minutes and serve warm.
