Ingredients

    1 tblsp vegetable oil
    5-6 slices turkey bacon, your choice, mine is Oscar Meyer Turkey Bacon
    1 medium onion, chopped
    3 gloves garlic, chopped
    1/2 serrano pepper, finely chopped
    1 bunch cilantro
    1/2 large carrot, or 1 medium, chopped
    2 stalks celery, chopped
    1 chicken breast, cut in cubes
    3 medium potatoes
    1/2 cup frozen spinach
    1/2 cup white beans, boiled and slightly season, or 1/2 can your bean choice
    salt, I used SenseLow Sodium Salt
    1 tsp cili powder
    1 tsp oregano powder
    5 cups tap water

Directions

After chopping and ptting all the ingredients aside, preheat a medium sauce pan with the vegetable oil. Add the bacon, thecarrot, the celery, the garlic, the onions, the peppers and stir for 5 minutes. Add the chicken cubes and season with the salt, the chili powder and the oregano, stir for 5 minutes more. When chicken is still pinkish pour the water and taste for flavor. Cover and wait 10 minutes before adding the potatoes, the boiled or canned beans and the spinach. Cover again let it cook for another 10-15 minutes at medium high. If you like it, you can semi puree it or simply let the chunks.
