Introduction

I packed this salad for lunch and I loved it...not very gourmet, but it does the trick... I packed this salad for lunch and I loved it...not very gourmet, but it does the trick...

Ingredients

    1 can of tuna in light oil
    1 can of white short grain rice
    0.25 cup sweet corn
    1 sour pickle, small cut in small cubes and drained
    salt, pepper

Directions

Makes 2 servings
Boil the rice (I use a steamer), and get rid of the oil in the tuna can. Mix them together, add the cut pickle, the sweet corn, salt and pepper. Mix and enjoy.
