Ingredients

    2 tbsp olive oil
    1-1/2 lbs boneless, skinless chicken breasts, cut in 1-inch cubes.
    1 small onion, coarsely chopped
    1 medium green bell pepper, coarsely chopped (about 1 cup)
    1/2 cup chicken broth
    1 can (14.5 oz) red kidney beans, undrained
    1 can (14.5 oz) diced tomatoes
    1 tbsp ground chili powder
    1-1/2 tsp garlic salt
    1 tsp ground cumin
    1 tsp oregano or cilantro leaves

Directions

1. Heat oil in a dutch oven or large skillet/saucepan over medium-high heat. Add chicken, onion, & bell pepper; saute 8-10 minutes.
2. Stir in remaining ingredients. Bring to a boil. Simmer 15 minutes.

Makes 6 - 1 cup servings
