Ingredients

    1 Cup Frozen Spinach
    1 Cup Canned Tomatoes or fresh if you prefer
    1/2 Cup of Medium Grain Brown Rice
    1 Tbsp of Olive Oil
    1 Tsp Garlic
    1/2 Cup of Onions Sliced
    1 Dash of Salt
    1 Dash of Black Pepper

Directions

Boil water for Brown Rice- Follow directions on box

Put Olive Oil in pan and heat- start with sliced onions and garlic. When they start to brown put in tomatoes and spinach with them. With a dash of Salt and Pepper it'll be perfect! When both are finished place rice in a bowl with the spinach and tomatoes on top. Enjoy!!
