Ingredients

    1 Medium Onion
    1/2 C Pace Picante Sauce
    1/2 C finely crushed tortilla chips
    1 lb. extra lean ground beef
    4 medium potatoes cut length ways
    1/4 C pickled jalapenos (chopped up)
    1 C shredded Cheddare cheese (optional)
    1 pkg McCormick Original Taco Seasoning

Directions

Preheat oven to 450*

Prepare 4 (18 x 12 sheets) of Heavy-duty aluminum foil. Spray the foil with nonstick cooking spray.

Combine 1/2 cup pace Picante sauce, tortilla chips, chopped onion, and 1/2 package mcCormick Original Taco Seaconing: add ground beef.

Shape mixture into four meat loaves. Place each one on a sheet of aluminum foil. Toss in the potatoes with the rest of the package of taco seasoning and chopped jalapenos. Pour the remailing 1/4 cup of Picante sauce on the meatloaf.

Bring up foil sides. Double fold top and ends to seal the packet; leave room for heat to circulate inside. Repeat to make four packets.

Bake 30-35 minutes on a cookie sheet in oven
Grill for 18-22 minutes
Bake 12-18 minutes in campfire of good coals

When serving sprinkle sheese on top.

Notes:
If you live where you can't get Pace Picante
Sauce, i'm very sorry. You could try to make
your own.

If you live where you can't get McCormick
Original Taco Seasoning. You can substitute
by making your own.

1 Tbl chili powder
1 tsp garlic salt
1/2 tsp ground cumin
