    1 1/2 cups all-purpose flour
    1/2 cup sugar
    1 tbsp baking powder
    1/4 tsp salt
    1 tsp cinnamon
    1/2 tsp nutmeg
    2 cups Complete Bran Flakes
    1 cup solid pack pumpkin
    1/3 cup skim milk
    2 egg whites
    1/4 cup vegetable oil
    1/2 cup raisins
    vegetable cooking spray


1) Stir together flour, sugar, baking powder, salt and spices. Set aside.
2) In large mixing blow, combine Complete Bran Flakes cereral, pumpkin, and millk. Let stand about 2 mintues or until cereral softens. Add egg whites and oil. Beat well. Add raisins. Stir well. Mix in flour mixture, stirring only until combined (batter will be stiff). Portion batter evenly into 12 2/1/2 inch muffin pan cups coated with cooking spray.
3) Bake at 400F about 20 minutes or until lightly browned. Serve warm.

  • The only thing I changed was to soak the raisins in boiling water before adding them to the muffins. Not very sweet, but that is part of what makes these healthier. Excellent with Apple butter. Might add a touch more milk next time I make them as the batter was very stiff. - 1/11/10
