Ingredients

    2 cans chick peas
    2/3 cup tahini sauce
    1/2 cup each lemon juic and water
    2 tbsp exta-virgin olive oil
    1 1/2 tsp cumin - optional
    1/2 tsp salt
    8 cloves garlic crushed (roast first prior to crushing)
    1 red pepper (cubed and roasted)


Directions

Roast red pepper and whole garlic cloves in 350 oven for 5 minutes.
In food processor, or blender, blend together chick peas, tahini, garlic, roasted red pepper, lemon juice, water, oil and spices. Process until smooth. Spoon into shallow serving dish. (about 8" square). Cover and refrigerate for 24 hours.
Serve with whole wheat pita triangles.
28 servings (1/4 cup each).
