Ingredients

    1 1/4 c. all purpose flour
    3/4 cup corn meal
    1/4 cup sugar
    2 tsp. baking powder
    dash salt

    1 cup milk
    1/8 cup oil
    1/8 cup water
    1/4 cup egg beaters

Directions

Heat oven to 400 degrees. Grease 8 or 9 inch baking pan (I use a cast iron skillet and preheat it.)

Combine dry ingredients. In a measuring cup combine wet ingredients. Combine dry and wet ingredients. Make sure everything is moistened. Pour batter into prepared pan. Bake 20-25 mins. or until light golden brown and wooden pick inserted near center comes out clean. Serve warm.

    Great and will make again, used 1/2 whole grain flour, splenda instead of sugar, and egg white only, so good! - 8/27/08
