Introduction

you can use whatever color pepper you like. you can also make this recipe larger but the calories will be higher you can use whatever color pepper you like. you can also make this recipe larger but the calories will be higher
Number of Servings: 2

Ingredients

    1/2-1 c. brown rice
    bell pepper (1 1/4)
    1/4 lbs ground turkey (i used an already made turkey burger)
    1/8 or so chopped onion

Directions

Cut pepper in half and boil until tender.
While the pepper boils, cook ground turkey, you can cook the rice at this time too.
Chop onin and some of another bell pepper and saute in olive oil.
Add bell pepper and onion to meat mix and let simmer for 10-20 mim depending on how much you have.
Add rice to meat mix and incorporate together.
Put the mix into each half of the pepper.
Bake for a few minutes (about 5-10)

makes 2 servings (1/2 pepper=1 serving)

    I used this recipe to inspire dinner tonight. Used light sausage for the meat, added a clove of garlic and a chopped tomato to the mixture, and topped it all with 1/4 cup lite mild cheddar. Added some salt and pepper and Italian herbs, too. :-) - 7/27/10
