The best ever.Usually I make it for two of us, because we like this a lot ;) but if you serve a dessert, or a soup too, it's enogh for 4. The best ever.

Ingredients

1 large zucchini
1 large yelow pepper
2 large tomatoes
1 cup rice
1 large onion
3 cloves garlic
100 gr chhese
seasons: salt, pepper, oregano, basil, thyme
Directions
Cut out the middle of the zucchini, stir-fry in the margarine the chopped onion, pepper, and mashed garlic, then add the chopped zucchini-middle.
Cook until golden, season with oregano, salt, pepper, basil, thyme... add the chopped tomatoes, cook under lid. Add the rice, some water (if needed) and cook till ready.
Stuff the zucchini-shells with the mixture, bake 30 min on the highest level of the owen covered with foil. Remove the foil, pour ower the grated cheese, and bake more 20-30 min on 200-220 C°. (usually I stuff with the remaining mixture 1-2 halved peppers, and bake them on the side of the shells. those are my little favourites :)
