Introduction

Ingredients

    1/2 c brown rice
    1 c chopped mangos
    1/4 c finely chopped cucumber
    2 tbsp chopped red onion
    2 tbsp Kdraft Signature Calorie-wise Balsamic Vinaigrette
    2 tsp canola oil
    2 tilapia fillets (225 gm)

Directions

Cook rice per package instructions. Meanwhile combine mango, cucumbers, onions and 1 Tbsp of dressing - set aside
Heat reamining 1 tbsp dressing and the oil in a large skillet on med high heat. Cook fish 3 min on each side until brown
Serve with rice and mango salsa
