Ingredients

    wheat berries (dry)
    white beans
    escarole/endive
    salt
    pepper
    canola oil
    garlic

Directions

Rinse and soak the wheat berries overnight. Place wheat berries and water in slow cooker (may add vegetable base or stock instead). Heat on low for 8 hours. Coarsely chop escarole/endive and boil in salted water for 5 minutes. Drain well. Heat oil in pan. Add garlic and cook until fragrant (~30seconds). Add escarole and cook until tender (~5minutes). Add white beans and heat through. Place all pan ingredients in slow cooker and allow the flavors to mingle for about 20 minutes before serving.
