Introduction

Easy, high fiber! Also, this is GREAT reheated. Easy, high fiber! Also, this is GREAT reheated.
Number of Servings: 4

Ingredients

    1 can diced tomatoes
    1 can kidney beans
    1 cup chicken broth
    1 cup onions
    2 tsp olive oil
    4-5 cloves garlic
    1 cup diced ham
    cajun seasoning to taste
    2 cups cooked rice

Directions

Heat oil in large pan.
Add onions & garlic, saute about 5 minutes
Add tomatoes, beans, ham, broth and seasoning. Bring to a boil; reduce heat & simmer about 1 hour.

Serve over rice

Makes 4 servings (about 3/4 cup beans to 1/2 cup cooked rice)

  • Haven't tried this recipe, to lower the sodium levels, use lower sodium tomatoes, chicken broth and even the ham. Can use dried red beans, soak and pre cook. Takes some searching in the grocery store, but these ingredients can be found. Also, look for cajun seasoning that has lower or no sodium. - 10/9/08
