Introduction

With chicken! And whatever vegetables I had. Traditionally it would have onion, green onion, bean sprouts, bbq pork and shrimp. But you know, this is tastey too. With chicken! Ingredients

    2 tbsp peanut oil
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1 1/2 cups sliced mushrooms

    3 cooked, diced chicken breasts
    4 cups rice vermicelli, soaked and drained

    3 tbsp chinese curry powder
    1/4 tsp chicken bouillon dissolved in 1/2 cup water
    1 tbsp fish sauce

Directions

Heat oil in wok. Add veg. Stir fry for about 2-3 minutes. Add chicken. Stir fry until heated through.

Add vermicelli and mix in. Sprinkle with curry powder and pour over bouillon liquid. Mix vigorously to evenly coat everything.

Add fish sauce and toss. Serves 3 as a main course (Nutrition Info) or about 6 as a side dish.
