Ingredients

    8 - 6 inch flour tortillas
    1 can fat free refried beans
    1 pound lean ground beef
    1 pkg. taco seasoning
    2 cups shredded cheddar cheese
    1 can enchilada sauce - red or green

Directions

1. Spray casserole dish with nonstick spray. Pour 1/2 of enchilada sauce on bottom of pan.
2. Cook and drain hamburger. Stir in seasoning and refried beans. Divide hamburger mixture evenly between flour tortilla shells. Sprinkle with ~2 Tbsp. cheese. Roll up tightly.
3. Place enchiladas on top of sauce. Pour remaining sauce over enchiladas and sprinkle with cheese.
4. Bake covered at 350 degrees for ~20 minutes. Uncover and cook another 10-15 minutes.

    My family loves enchiladas so we decided to try this recipe. I've never put refried beans in it and it made it soooo much better. We all agreed to have this again!!! - 1/23/08
