Ingredients

    Tilapia, 16 oz (~4 slabs of fish)
    1/2 red bell pepper, strips
    1/2 green bell pepper, strips
    1/2 yellow bell pepper, strips
    1/2 onion, strips
    ~ 3/4 cup carrot, thin strips
    1/2 cup White Wine
    4 tsp olive Oil
    1/4 cup lemon juice
    2 tsp lemon peel, grated
    2 tsp black pepper
    1 tbsp salt
    1 lemon, 2 slices per fish piece

Directions

Cut the vegetables into strips.

Mix the olive oil, lemon juice, & white wine. Pour into large baking dish. Add vegetables, and toss to coat with oil mixture. Place fish on top of vegetables.

Mix lemon peel, salt, and pepper. Season the fish. Place 2 lemon slices on each fish piece.

Cover dish and bake @ 350 for 20-25 minutes.
