Ingredients


    2 eggs
    1 banana
    3 Tablespoons Multigrain Pancake Mix, dry (I use this)
    1 scoop Vanilla Protein Powder
    1/2 teaspoon Baking Powder
    1 cup Vanilla Soy Milk
    1/2 cup Unsweetened Coconut, toasted
    2 Tablespoons Sugar Free Torani Syrup (I used SF Caramel)
    1/4 teaspoon (+ a dash for tops) Nutmeg
    dash Cinnamon

    Mix all ingredients in a blender till smooth.

    Pour mixture into 4/4-oz ramekins or custard cups.

    Just place the ramekins in a large roasting pan. Place pan on oven rack and pour enough very hot water to come halfway up sides of of ramekins. Sprinkle top of each souffle with additional nutmeg

    Incredible!
    I mixed all of the ingredients together and then used a 1 cup microwave safe glass bowl for 1/2 cup of mix. Microwavefor 1 min 15 sec. Very good. - 8/29/11

    These souffles are so good - substantial and yummy. Great for weight loss surgery folks, as all of Shelly's recipes are. I also added 2 TB of raisins and 2 TB of chopped nuts divided into the 4 ramekins, which I'd done for the pumpkin souffle recipe. Thought it really added nice texture. - 1/13/10
