Ingredients

    1 lb beef stew meat
    4 T olive oil
    1 c chopped onion
    4 cloves garlic, minced
    1/2 c chopped celery
    2 t dried oregano
    1 T Lea&Perrins Worcestershire Sauce
    2 cubes beef bouillon (or 2 t)
    4 c water
    1 large potato, 1/2 inch dice
    2 c frozen mixed vegetables

Directions

Makes 5 main-dish servings

Brown beef in olive oil. Add onion, garlic, and celery. Sautee for 1-2 minutes until fragrant. Add oregano, Worcestershire sauce, beef bouillon, and water. Bring to a boil, then simmer for 45-60 minutes until beef is tender. Add diced potato. Simmer for 20-30 minutes until potato is tender. Add frozen vegetables and remove from heat (residual heat of soup will cook vegetables perfectly).

Serve with Whole Wheat French Bread and some good, sharp cheddar.
