I have tweaked this recipe to maximize nutrition. These are high in fiber, protein and vitamins. They contain whole wheat oats, flour and flax seed. They are egg free. They are low in sugar. Be careful, though, the calories can add up!

Ingredients

    1/3 cup butter
    1/3 cup applesauce
    1/3 cup brown sugar packed
    1/3 cup Twin sugar--granulated brown
    2 tbs. ground Flax seed
    6 tbs. water
    1 1/2 cups whole oats
    1 1/2 cups whole wheat flour
    1 tsp baking soda
    1/2 tsp salt
    1 1/3 cup sweetened dried cranberries
    1/2 cup chopped nuts

Directions

Heat oven to 375. Combine all ingredients. I use a large ice cream scoop and it yields 7 cookies. You can make them smaller if you like.
Bake for 12 or so minutes; the time will vary depending on the size of the cookie.
