Ingredients

    1 tbsp canola oil
    1/2 lb top round beef, cut into strips
    2 tsp cornstarch
    1 tsp ground ginger
    3 tbsp orange marmalade, Smuckers Sugar Free
    1 cup broccoli, chopped
    1 cup carrots, shredded
    2 tbsp soy sauce, lite or low sodium

Directions

In a medium bowl mix beef, cornstarch, ginger, and orange marmalade.

Heat oil in a skillet over medium-high heat. Add beef and stir fry for 5 minutes or until browned and cook through. Add broccoli, carrots, and soy sauce. Lower heat to medium-low and cover. Cook for 3 minutes.

Serve over rice.
