Ingredients
-
1 tbsp chili powder
.5 tbsp ground cumin
1 tsp white sugar
.5 tbsp pepper
1 tbsp garlic powder
1 pound Chicken Breast, no skin
1 diced Yellow Bell Pepper (medium to large)
1 diced Red Bell Pepper (medium to large)
1 diced medium onion
1 cup water
6oz can Tomato Paste
28 oz (793grams-ish) Crushed Tomato
1 package Elbow Pasta
1 pat unsalted butter
Directions
Prepare the pasta according to the package.
Shred/grind the chicken - I used a food processor to make smallish chicken chunks.
Partially cook the chicken using the whole cup of water in a skillet. (Until the chicken is just barely white). Once the chicken is all white, add all the seasonings, both bell peppers and the onion.
Stirring often, heat until the Chicken is fully cooked.
In a large pot, mix the chicken mixture with the elbow pasta. Add the crushed tomato, the tomato paste and the pat of butter. Heat and simmer for 10 minutes.
Try not to eat too much.... :)
Makes 12 large servings.
