Introduction

This is my twist on homemade wor won ton soup. Its full of vegetables, 2 cups per serving, and because it uses ground chicken breast in place of pork and no won ton wrappers, its lower fat and lower carb than the original. This is high in sodium, though, so watch your intake for the rest of the day or reduce the soy sauce in this recipe if salt is a concern for you. This is my twist on homemade wor won ton soup. Ingredients

    Won Ton Meat Balls

    ½ lb ground chicken breast
    1 4 oz can shrimp pieces, drained
    1 egg
    1 Tablespoon low-sodium soy sauce
    ½ teaspoon sesame oil
    2 garlic cloves
    1 green onion
    ¼ c water chestnuts

    Soup
    6 cups stock
    2 tablespoons light soy sauce
    1 teaspoon sesame oil
    1” ginger root

    1 cup carrots
    2 cups broccoli
    1 cup cauliflower
    ½ cup green pepper
    ¼ cup red onion
    ½ cup bok choy
    1 cup celery
    ½ cup leeks
    1 cup mushrooms

Directions

For the wrapperless won tons, combine all the ingredients in a food processor. Makes 16 won ton meat balls. Steam balls over boiling water for 15 minutes. Set aside.

Combine with the broth 2 tablespoons light soy sauce, 1 teaspoon sesame oil and 1” ginger root.
Chop and add vegetables to the broth, Cook until vegetables are desired firmness. Add meat balls just to heat through. Remove piece of ginger root before serving.
