Ingredients

1/2 cup whole wheat flour
1/4 cup packed brown sugar
1/8 cup mini semi-sweet chocolate chips
1/8 cup chopped pecans
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/2 cup nonfat milk
1/4 cup quaker quick oats
1 egg white
1/2 tsp vanilla extract
1 1/2 small banana, mashed
Directions
Preheat oven to 400F.
Pour milk over oats and set in refrigerator for an hour. Combine all dry ingredients in separate bowl. Mash bananas and add to oat mixture. Stir in egg white and vanilla extract. Pour liquids into dry ingredients and mix until just combined.
Spray 6 regular-sized muffin cups with cooking spray (I used silicone muffin cups). Fill muffin cups equally (they will be quite full) and bake for 23-25 minutes.
Set on wire rack to cool for 10 minutes.
Makes 6 extra moist muffins.
