Introduction

This black bean salsa is great with chips or chicken. The corn adds a great sweetness. If you like your salsa spicier add more green chiles. This black bean salsa is great with chips or chicken. The corn adds a great sweetness. If you like your salsa spicier add more green chiles.

Ingredients

    1 Can black beans - drained and rinsed with cold water
    1 can Rotelle tomatoes with green chiles - drained slightly
    2 cups frozen sweet corn (or corn cut off the cob)
    1 bunch green onions
    salt
    pepper
    juice of half a lime

Directions

Drain beans and rinse well with cold water, add to serving dish. Drain tomatoes and add to dish. Slice green onions, include some of the green and add to dish. Run cold water over frozen corn for a few minutes, drain and add to dish. Add salt and pepper and juice of half the lime. Mix well and regrigerate. Serve with nacho chips, crackers or place over cooked chicken.

Makes 8 1/4 cup servings
