Ingredients

    1 t Olive oil for pan
    4 eggs
    4 oz Momzerella cheese
    l 3/4 cup Plain yogurt
    1 c zucchini
    1/2 lg green pepper
    1 banana or Hungarian Pepper
    3/4 c onion chipped
    2 T four (wheat or spelt)
    1/2 t salt
    1/4 t garlic powder
    optional 1/4 t fine herbs

Directions

makes 4 servings (1/4 of an 9" round pan)


Mix all ingredients together until blended.

Bake 350 degree oven for 20 -30 min.

Serve hot with Salsa if desired
