Ingredients

    4 C Sliced Carrots
    3/4 C Low-fat Mayo
    1/4 C Chopped Onion
    2 T Prepared Horseradish
    1/4 t. Black Pepper
    1/4 t Salt
    14 Saltine Crackers, crushed
    1 T Margarine
    2 T Parsley
    1/2 C American Cheese, shredded

Directions


In a micro-safe casserole dish, cook the carrots in 2 T. water, covered, for 6-8 minutes or until tender. Drain. In a small mixing bowl, mix the mayo, onion, horseradish, salt, and pepper. Add to carrots and stir to combine. In another bowl, toss together the crushed crackers, melted margarine, and parsley. Sprinkle the cracker mixture over the carrots. Return to the microwave and cook on high, uncovered, for 3 minutes. Add cheese on top and cook 1-2 minutes more or until the cheese is melted. This is very colorful and makes a nice presentation!

    Incredible!
    I used wholegrain crackers, reduced fat cheese, and substituted deli mustard with horseradish. No layers; just mixed it all together and baked. I mashed the carrots, and the second time I made it, added chopped leftover zucchini. Big hit at potluck! - 2/3/13
