Introduction

Ingredients

8 oz Fresh Mozzarella Cheese
7 large Sweet Bell Peppers (Red, Orange, Yellow)
~25 cloves of Roasted Garlic (more or less to taste)
3 sprigs of fresh Oregano
1/4 c Balsamic Vinegar
Directions
Roast the bell peppers and garlic. Once the peppers have blacked, place in a paper bag and allow to cool. Once cooled, remove the skin and core. Slice into 1" squares. Cut the mozzarella into small cubes. Remove the stems from the oregano, and coarsely chop.
Mix all ingredients together in a bowl with the vinegar. Allow to chill and marinate before serving.
