Introduction

I make a double batch of meat loaf so I can use it throughout the week. Basic recipe - old family favourite - easy to switch up with different spices. Sometimes to switch it up instead of topping with tomato soup I'll use salsa. Great with boiled potatoes and brocolli - good ol fashion cooking. Ingredients

    2 lbs lean ground beef
    2 cup rolled oats
    1 large egg
    8 TB ketchup
    9 tsp mustard
    2 tsp Garlic Powder (or more to taste)
    1 cup chopped onions
    .5 cup bar b q sauce
    1 can tomato soup

Directions

makes 16 servings

Combine all ingredients, except only half the can of soup.

Shape into long meatloaf in large baking dish (pan with higher sides) so that the mealoaf has open space around all edges. Shape meatloaf so centre is lower than sides of meatloaf (to hold the sauce)

Pour remaining half a can of soup over top. Loosely cover with foil

Bake in 350 degree oven for approximately 60 to 90 minutes until meat is cooked through - removing foil for last half hour to brown the top and sides

    Instead of one big meat loaf, I divided it into 2 pans to cook. I wrapped one loaf in aluminum foil to freeze since there are just 2 of us. It was very good. DH really liked it. - 2/14/19

    I wish I could give half ratings. This was a good meatloaf. I forgot to cover it, so the top got a bit dark, but the whole family loved it anyway and all said it was on the "please do again" list:) Thanks so much for sharing it! - 1/7/09

    just added some green pepper and some times left over mashed potatoes. Also try salsa and corn chips. - 10/1/08
