Introduction

For when you want "BANANA bread" and not "Banana BREAD". Bananas make an excellent egg substitute and you can actually use more in this recipe for a truly bananariffic flavor.

Ingredients

    4-5 medium overripe bananas, sliced or mashed
    1/2 cup Splenda
    1/2 tsp baking soda
    1/2 tsp baking powder
    1 1/2 cup flour
    1/4 cup canola oil

Directions

Serving size: 1 standard loaf

Preheat oven to 350°.

In large bowl, blend oil and Splenda until smooth. Add bananas to bowl. Blend in the dry ingredients.

Once well mixed, pour into greased loaf pan. Bake for 45-50 minutes or until browned on top and fork test is clean.
