Ingredients

    1 Boca mozzarella mushroom burger, crumbled and sauteed
    1 Al Fresco (or similar) italian chicken sausage (less than 10 g fat), diced and sauteed
    3 Dominex (or comparable) light breaded eggplant cutlets (or use your own)
    1 package shiritaki noodles (prepared as per instructions)
    1/2 C pasta sauce, your choice
    1/4 C fat free mozarella
    1.5 TBL part-skim mozzarella
    greek seasoning blend

Directions

1. bake off eggplant until crispy
2. sautee sausage and veggie burger
3. boil noodles as per instructions, drain & pat dry
4. Layer noodles, eggplant, sauce and meats
5. Top with cheese, seasoning and bake until bubbly
