Introduction

Ingredients

    Brownie Ingredients:

    2 Cups Zucchini - Shredded
    1 1/2 Cups Sugar
    3/4 Cup Extra Virgin Olive Oil
    2 tsp Vanilla
    2 Cups Flour
    1/3 Cup Cocoa
    1 1/2 tsp Baking Soda
    1 tsp Salt


    Frosting Ingredients:

    1/4 Cup Butter
    1 Cup Sugar
    1/4 Cup Milk
    1/2 Cup semi-sweet Chocolate Chips
    1/2 Cup Mini Marshmallows
    1 tsp Vanilla

Directions

Mix ingredients for brownies.
Pour into a 9x13 pan
Bake at 350 for 35 - 40 minutes

After brownies are cooled:
Melt butter in sauce pan
Stir in sugar and milk
Bring to a boil -stir
Boil for 1 minute while stirring
Stir in Chocolate Chips and Marshmallows
Add Vanilla
Spread quicky over brownies

    Very Good
    I made this using Canola oil instead of Olive oil and my whole family had a really hard time only having one!! I have two little kids and a husband that isn't into "diet" food and they loved it. - 7/29/10
