Introduction

Number of Servings: 4

Ingredients

    To make 4 servings:

    12 large sea scallops (or 28 little scallops)
    1 cup Soy milk ( I use Silk plain Light)
    1/2 cup white wine
    1/2 tsp saffron
    1 cup sliced mushrooms

Directions

In a small sauce pan, bring soy milk and wine to a near boil.
Add mushrooms and saffron.

In a seperate pan, sear scallops on both sides.

Once sauce is boiling add scallops and cook until scallops are cooked all the way through.

The sauce WILL BE thin.

Serve over your choice of rice or pasta.

    We have enjoyed several recipes from spark people until this one. The spice cost about $16 and the taste was very bland. Will not make this one again. - 4/6/11
