A nice refreshing salad. It can be served as an appetizer, side dish or as a snack. A nice refreshing salad. It can be served as an appetizer, side dish or as a snack.

Ingredients

    2 1/2 Cups, Whole Kernel Corn, Frozen & Thawed
    1 1/2 Cups, Black Beans, Canned, Rinsed & Drained
    1 Cup Roma Tomatoes, Diced
    1/2 Cup Red Onion, Diced
    1/2 Cup Cilantro, Fresh, Finely Chopped
    2 Cloves Garlic, Fresh, Minced
    1 - 2 TBLSP Lemon Juice, Fresh

Directions

Add each ingredient, in the form as instructed, in a large bowl. Mix thoroughly and refrigerate for approximately 1/2 hour to an hour.

Makes 8 3/4 Cup Servings
