This is a quick recipe I threw together for myself. There's just me, so cooking isn't always fun and easy, though I'm pretty good at it. So I toss in a few around-the-house ingredients. Ingredients

* *Foster Farms Grilled Chicken Breast Strips, 3 oz
* *Uncle Ben's Ready Rice, Buttery Flavor, 1 cup (I actually use the Spanish/Mexican rice variety for some better flavor)
* *Tillamook Pepper Jack Cheese, 1 oz
* *Refried beans, ROSARITA, refried beans, traditional, 0.5 cup
* *Tia Rosa Burrito Size Flour Tortilla - 1 tortilla, 1 serving
Directions
First, brown the chicken strips in a skillet with a little extra virgin olive oil -- this keeps them moister than just the melted ice will. I add a little carne asada spice to flavor.
While the chicken is browning, cook the Ready Rice in the microwave.
Once the rice is finished, let it sit while you heat up just enough beans to lightly coat the inside of the tortilla.
Make sure you check the chicken strips throughout -- you don't want to burn them.
Turn on your George Foreman grill if you want to toast the burrito. I do -- it melts the cheese better than just letting it sit.
When the chicken is finished, let it drain on some paper towels.
Wet another paper towel and fold it into a small rectangle. Place it inside the microwave and heat up your tortilla for about 20 seconds. The towel helps steam the tortilla and make it easier to fold.
Spread the beans on the tortilla.
Spoon some rice onto the middle of the tortilla.
Place a handful of chicken strips on top of the rice and cover with cheese.
Fold up your burrito and heat it on the grill if you wish.
