I make this recipe for my family as our dinner and serve it with some green vegetables like brussels sprouts. It is heavenly. It's like having Thanksgiving any time. Ingredients

4 cups Multi grain bread, cubed
2 cups wheat bread, cubed
1 tsp garlic powder
1 lb. chicken or turkey sausage
1 medium onion, chopped
2 tsp sage
1 tsp rosemary, crumbled
1/2 tsp thyme
1 large tart apple, cored and chopped
1 cup dried cranberries
3 tbsp minced parsley
3/4 cup chicken or turkey stock
1/4 cup light margarine, melted
Directions
1. Preheat oven to 350 degrees. Spread bread cubes in a single layer on a large baking sheet. Sprinkle with garlic powder. Bake for 10 minutes, stirring twice while baking, or until evenly toasted. Transfer bread to a large bowl.
2. In a large skillet, scramble to sausage and onions over medium heat until the sausage is browned. Add the celery, sage, rosemary and thyme. Cook another 2 minutes, stirring to blend flavors. Do not drain.
3. Pour sausage mixture over bread in large bowl and toss gently. Mix in apples, cranberries and parsley. Drizzle with chicken stock and melted margarine. Mix lightly.
4. Spoon into turkey and roast according to turkey directions. If any stuffing is left over, or if you are making the stuffing as a meal, bake in a casserole at 350 degrees for 30 to 45 minutes until lightly brown and crisp on top.
Makes 12 servings. I eat 2 servings as a meal.
