Introduction

Ingredients

    3 Egg Whites
    1 Cup Spinach
    1/2 Cup Mushrooms
    2 Tsp. Green Pepper
    2 Tsp. Onion
    A dash of garlic powder
    a dash of black pepper
    A dash of red pepper flakes to taste
    Olive oil or Pam

Directions

1 Serving/ I buy all the ingredients and make between 6 and 8 ziploc bags to freeze. I saute the ingredients in olive oil and add 3 egg whites and cook till done.

    Good
    This makes a *huge* omelet, easily enough for 2 people with toast. I substituted swiss chard (silverbeet) instead of the spinach and paprika instead of the red pepper flakes. The omelet was good, but a little plain. I'd suggest adding a little stock powder with the pepper and some cheese. - 10/16/08
