Ingredients

    1 c egg whites or liquid egg substitutes
    1 c unsweetened applesauce
    1 ½ c sugar
    2 c canned pumpkin
    2 c flour
    1 tbsp baking powder
    1 tsp baking soda
    ½ tsp salt
    2 tsp cinnamon
    ½ tsp ginger
    ¼ tsp nutmeg
    ¼ tsp cloves
    Powdered sugar (optional and not included in nutritional information)

Directions

Preheat oven to 375*. Lightly spray a 12 x 18 x1 in pan with nonstick spray. In a large bowl, whisk together egg whites, applesauce, sugar, and pumpkin. Sift or stir together flour, baking powder, baking soda, salt, and spices. Gently fold dry ingredients into pumpkin mixture; do not overmix. Spread evenly in pan. Bake until firm to touch and lightly browned, 20 – 25 minutes. Cool, then slice into 24 bars. If you desire, dust with powdered sugar just before serving. Serving size 1 bar
