Ingredients

    4 teaspoons olive oil (or spray olive oil)
    4 medium baking potatos (600 grams), scrubbed
    1/2 tsp salt
    1/4 tsp freshly ground black pepper
    1/4 cup grated parmesan cheese (1 ounce)

Directions

Line a 15x10x1-inch baking pan with heavy-duty foil; brush with 2 teaspoons of the oil (or spray with extra virgin olive oil spray). Set aside.

Cut the potatoes lengthwise into 1/2-inch wedges. Transfer to a large bowl. Add remaining 2 teaspoons of oil (if using spray olive oil skip step). Arrange potatos in a single layer in prepared baking pan. If using spray olive oil spray potatoes with oil. Sprinkle potato wedges with salt and pepper.

Bake in a 450 degree oven for 12 minutes. Careflly turn potato wedges; sprinkle with cheese, and additional salt and pepper to taste, and if using spray olive oil spray with olive oil. Bake for 10-12 minutes more or until golden. Serve immediately.
