Ingredients

    2/3 cup oat bran
    1 cup spinach, cooked
    2 large eggs
    2/3 cup milk, nonfat
    1 tsp baking powder
    dash salt
    1/3 cup hollandaise sauce, prepared
    2 oz part skim mozzarella, grated

Directions

Preheat oven at 450.

Mix oat bran, bakin powder, the eggs and milk to make pancake batter.

Spray your skillet with Pam or other coating, heat it on medium hi, and pour in the batter. sprinkle spinach evenly, spread the hollandaise sauce and top with cheese. Put in oven for 10 minutes or until cheese is golden.

Note: the batter wil not be cooked yet when you'll be adding the toppings. That's fine, it will finish cooking in the oven.
