Ingredients

    2 c. low sodium reduced fat chicken broth
    2 c. vegetable broth
    1/2 pkg. frozen broccoli florets
    1/2 pkg. frozen corn
    1/2 onion, chopped
    3 med. stalks celery, chopped
    1 tsp. diced garlic (jarred)
    1/4 tsp. tarragon
    1/4 tsp. thyme
    1/2 tsp. kosher salt
    fresh ground black pepper to taste
    2-3 c. fresh, baby spinach

Directions

Bring the broths to a boil. Add frozen vegetables and return to a boil. Add onion and celery. REturn to a boil then reduce to a simmer. Add garlic and spices. Simmer for 7-8 minutes. Add spinach and simmer 2-3 minutes more . Transfer in batches to a blender or food processor, or use a wand blender to process soup. Makes six 1 cup servings. Enjoy!
