Ingredients

    1 package (20) small mushrooms
    2 small cloves of garlic
    1/2 cup seasoned bread crumbs
    3 tbsp country crock
    2 tbsp lemon juice
    2 tbsp grated parmesan cheese

Directions

Preheat oven to 375 and spray cookie sheet with cooking spray.
Clean off mushrooms, break off stems and put stems in food processor. Place mushroom caps stem side up on cookie sheet.
Combine all ingredients in food processor.
Spoon filling into mushroom caps.
Bake in oven for 20 minutes or until filling is brown.
Makes 4 servings of 5 stuffed mushrooms.

    Very Good
    I love stuffed mushrooms so I was thrilled to find this recipe. I made two substitutions only. I added 1/2 chicken breast and used stove top stuffing mix rather than seasoned breadcrumbs because it was what I had on hand. It was very tasty. - 2/21/11
