Ingredients

    1/2 head of cabbage
    6 scallions chopped
    2 green bell peppers
    2 cans stewed tomatoes
    3 carrots
    1 package mushrooms
    1 bunch celery
    1 package lipton onion dry mix
    2 cubes chicken bouillon
    1 can v8
    8 cups water

Directions

Chop scallions and begin to cook on low in 2 tablespoons of olive oil. Chop bell peppers and add to pot. Choop scallions, carrots, celery, and cabbage and add to pot. Add water, chicken bouillon, and V8 to pot. Stir in Lipton Soup mix. Season with salt, pepper, and parsley to taste.

    This is a good soup for a snack between meals. very filling and satisfying. I like it with a lot of pepper or tabasco sauce. - 3/14/07
