Introduction

A low cal, low carb and high in vitamin C substitute for mashed potatoes. My mother used to make mashed cauliflower for the family when we were all on Atkins. Ingredients

    1 head of cauliflower, fresh
    1/2 clove of garlic
    1 tsp olive oil
    2 Tbsp low fat cream cheese
    1 Tbsp light butter
    Salt and pepper to taste

Directions

Remove florets from stalk of cauliflower
Boil florets for 30-45 minutes or until tender
Mince garlic
Mash / blend cauliflower
Add minced garlic, olive oil, cream cheese, butter, salt and pepper and blend until even
Makes 3-4 servings
