    1 lb. beef stew meat (fresh or frozen)(lean or chuck)
    3 carrots peeled and sliced
    2 medium Yukon gold potatoes, cut into large cubes
    1 onion sliced
    1 jar Hunts Diced Tomatoes with Basil, Garlic, and Oregano
    3 cups water
    about 7 beef bullion cubes
    1 cup yellow sweet corn, frozen
    2 tbs. cornstarch diluted in water
    pepper, to coat beef


Place beef in crockpot, coat with pepper. Place all other ingredients in crockpot except cornstarch. Cook on low heat 6-8 hours. Add cornstarch in last hour to thicken sauce.
