Ingredients

    1 T extra virgin olive oil
    2 garlic cloves, minced
    1/2 onion, chopped
    1 zucchini, chopped
    1 large carrot, chopped
    2 celery stalks, choppe
    1 T gingerroot
    1 28oz can Tomatos, not drained
    1 T cumin
    1/2 T dried oregano
    1/2 t ground black pepper
    7 oz whitefish fillets
    7 oz scallops, cut in half
    1 cup water

Directions

heat oil in a large pan, add garlic and onion and cook till soft. add zucchini, carrots, celery and ginger. saute for 5 minutes.

add tomatoes and juice, spices, fish, scallops and water and bring to a boil. reduce heat and simmer for 7-10 minutes.
