Introduction

This is the guacamole my Ecuadorian host mother taught me to make. Even my Ecuadorian friends raved about it. It's simple, and easy and so good! This is the guacamole my Ecuadorian host mother taught me to make. Even my Ecuadorian friends raved about it. It's simple, and easy and so good!

Ingredients

3 ripe avacados (they should be quite soft when you squish them)
    1 medium tomato, chopped
1 small-medium white onion, finely chopped
    1 lime, for the juice
    salt, to taste

Directions

cut the avacados in half and scoop out the inside into a medium bowl, avoiding hard white parts

mash the avacado with a fork unti it has the consistency of a dip

add the chopped tomato, some of the chopped onion (depending on the size and yield of the avacados), salt, and squeeze a thick slice of the lime into the bowl

mix the ingredients and taste, you may need to add more salt or lime juice

serve!

makes guacamole for 4-5 people

*hint-if you're making the dip ahead of time, leave the avacado pits in the guacamole, which prevents it from turning brown while it sits

**hint-if the guacamole has some brown spots it hasn't gone bad, it's like the brown on an apple. just add some lime juice and stir.
